Average Cooking Time: 35 mins
This is one of my go to mid-week dinner recipes. It requires little effort, and the result is always delicious. This Italian inspired sausage recipe is always satisfying. I like it to serve it with rice. This recipe serves 2-3 individuals.
1 packet of hot Italian sausage (usually 6 links)
2-3 tbsp of garlic infused olive oil or regular olive oil
1-2 bell peppers ( any color)
1 large onion (any variety that’s light in color)
1 tbsp Italian seasoning
Prep: Roughly slice onion and bell peppers. Cut sausage links into thirds.
Place the sliced peppers and onion on a baking sheet, pour about 1 tbsp of olive oil over the vegetables, and
add Italian seasoning, salt and pepper to taste.
Then place in a pre-heated 350˚F oven, for 20 - 25 mins, stirring every 10mins or so, for even roasting.
While the vegetables roast - place a skillet over medium heat and add 1-2 tbsp of olive oil, and sauté the
sausage links, in the oil until the sausage has browned. This should take about 5 -7 mins. Then cover and take
off the heat.
When the vegetables are done roasting, add them to the skillet with the sausage links and turn on the heat to
medium/low, cover and allow to simmer for 2- 3 mins to allow flavors to blossom.
After a few mins, taste to ensure there’s enough salt .
Then serve (over rice) and enjoy!
